Comfort Apple Pie

This is what we do around my house when it rains in the summertime!

Delicious Apple Pie

And of course my kids are used to me saying..

“hold on I need to take a picture first”!

We failed miserably at using the little pie bird. He kept falling over so the pie wasn’t the prettiest thing you have ever seen.  Here is my favorite little Apple Pie recipe adapted from Mary Engelbreit’s Sweet Treat Cookbook:

Ingredients:

Favorite pie crust recipe

Filling:

5 large granny smith apples, peeled, cored and sliced

1/2 cup of sugar

2 TBL of cornstarch

1 TBL fresh lemon juice

1 TBL ground cinnamon

1/2 tsp freshly grated nutmeg

Mix all the ingredients together in a large bowl and spoon into your unbaked crust.  Top with another crust and cut four steam vents on the top. Bake on the lower part of the oven at 425 degrees for 10 minutes.  Lower the temp to 350 for another 35 minutes.  Cool and serve with your favorite vanilla ice cream.
